Carnaval, which is the word in Spanish and Portuguese, originated long before the emergence of Christianity. In Ancient times, people whom we call pagans today had large celebrations centred around the solstices and equinoxes to welcome the light and to thank for a successful harvest season. These celebrations were the ones that people were reluctant to give up, even after they became Christians.

Carnem levare means "to take away meat" therefore, Carnival can be seen as the last chance to have some fun (and eat some good steaks) before the 40 days of Lent. 

When European traditions arrived in America, they were transformed and shaped by the broad ethnical diversity in the region. That is how Latin American Carnivals became such a unique celebration.
